Kielbasa Casserole

You can go by the box on this dish, or home made. I'm going to give you both recipes. Obviously, by the box is much quicker. The first recipe will be by the box, and the second, home made.



Ingredients from the box:

2 boxes of Scallop Potatoes (milk and butter)
2 bags of frozen broccoli (I have also used the California medley)
2 packs of beef kielbasa sausage
2 cups of your favorite shredded cheese
1 tbsp minced garlic
1 large pot (dutch oven)
1 large fry pan
1 large cake pan

Take your ingredients called for from the scallop potatoes boxes and put them in the sauce pan, except for the potatoes themselves. Put water, milk, butter, seasonings, and garlic, and I add an extra tsp butter. Put on stove on medium heat. Once you see a little steam, stir in 2/3 cup of the shredded cheese. Once your cheese is melted, add potatoes. While that is simmering on medium heat, slice up your kielbasa in medium rounds, melt some butter in the fry pan, fry the kielbasa. Once the meat is fried, add to the sauce pan. Then you can add the broccoli to the sauce pan. Turn burner to medium high for five minutes. Stir it all together, pour contents into cake pan. Take the rest of the cheese and sprinkle over the top. Oven should be preheated at 350 degrees. Put casserole into oven for 20 to 30 minutes or until top cheese is a light golden brown. Pull it out, let stand for 10 minutes, dish up and serve.

Ingredients for homemade:

6-7 large potatoes
1 cup milk
3 tsp butter
3 cups shredded cheese
1/2 cup water
2 bags of frozen broccoli
2 packs kielbasa sausage
1 tbsp minced garlic
                                                      1 large pot (dutch oven)
                                                      1 medium sauce pan
                                                      1 large fry pan
                                                      1 large cake pan

Take your potatoes (if you don't like the skin, peel them) and slice them in round pieces. Put them in large sauce pan, cover with water, bring to boil, and let them boil for 15 minutes, drain water. You don't want them to be completely done. Slice up your kielbasa in medium rounds, melt some butter in the fry pan, fry the kielbasa. Take your medium sauce pan and put your water, milk, butter, and garlic over a medium heat. Once you see a little steam, add 1 2/3 cups of cheese, a little at a time, stirring as you go. Take the cake pan and layer your potatoes, then kielbasa sausage, then your broccoli, and then pour your cheese sauce over the top. Take the remaining 1 1/3 cups of cheese and sprinkle over the top, cook casserole in the oven the same as above.

 Notes: Potatoes are easier to slice when cooked.
          
 For cheesier sauce, add more cheese, when making your cheese sauce, make sure you have it on medium heat, or it will come out soggy and stringy.
