Pot Luck Pork Loin Roast

I love making pot luck dinners. Take a pork loin, I buy mine pre-marinated from Aldi's. You can get yours however you like. I use Lawry's seasoning salt, garlic powder, and onion powder.




  • 6 large potatoes - cut up into quarters
  • 1 medium red onion - cut in half, then thin slices
  • Half a bag of baby carrots  - slice each carrot into thirds
  • 1 marinated pork loin
  • 1 pouch brown gravy mix - makes approx 3 cups
  • 1 large roasting pan
Take all your vegetables and lay them in the bottom of your roasting pan. Sprinkle mentioned seasonings above over them. Lay your pork loin on top. Pour your gravy over top of everything. Cover with aluminum foil, and put in oven. Set temperature at 350 degrees. Cook for approx one hour. You can do the same with a crock pot as well.  Yummy! Enjoy! Happy Eating!
