Low Carb Shepherd's Pie

Shepherd's Pie is one of my favorite meals. I have the recipe with potatoes on this site as well. When it comes to low carb meals, cauliflower will be your substitute for rice and potatoes.



Ingredients:

2 heads of cauliflower
2 lbs of ground beef
8 oz of cheddar cheese
8 oz of mozzarella cheese
1 medium onion
1 stick of butter
1 cup of almond milk (unsweetened)
9x13 pan
Preferred seasonings (Lipton Onion Soup Mix, salt, pepper,
                                                      and garlic powder)
                                                      If you like mushrooms, add them and cook them with the beef
                                                      Add desired veggies after beef is cooked and drained, like
                                                     corn, peas, diced carrots, whatever floats your boat :)
                                                          
Directions:

Cut up cauliflower and boil until mushy soft
Drain water, mix it like you would mash potatoes, with the butter and milk
Cut onion (I prefer small pieces)
Fry onion with beef, drain grease
Layer beef in the 9x13 pan
Spread half of the mozzarella cheese over the beef
Layer mashed cauliflower over the the cheesy beef
Layer the rest of the mozzarella and cheddar over the cauliflower
Bake @ 350 degrees for 20 to 30 minutes, cheese is slightly brown

FYI: Corn and Peas are starchy vegetables, I would use one or the other, but not both.


Low Carb Vegetable Beef Soup


 Great Soup to Eat for a Low Carb Diet!


Ingredients:

*NOTE - use your own disgression of fresh, frozen, or can

2 cans of carrots
1 can of whole kernal corn
1 can of green beans
1 can diced tomatoes
1 bag of frozen cauliflower
2 lbs of ground beef
1 medium onion
1 pack of beef gravy or 6 beef bullion cubes
If you like mushrooms, definitely add some

Season to your own taste (salt, pepper, seasoned salt, garlic)

Directions:
Put all vegetables in a large pot/dutch oven
Make sure your cauliflower is in small bite size pieces
Add enough water to cover the veggies
Add your seasonings and gravy/bullions
Fry the ground beef and onions together, drain grease
Add beef and onions to your pot of veggies
After adding the beef, check for soup consistancy, may have to add more water
Simmer on medium heat for 20 minutes
If you are using fresh veggies, they
need to cook longer, until tender
